For two years we roasted our house blend the way the manual suggested. Then one grey Tuesday we let a batch run ninety seconds longer, just to see.

What the extra time does

The sugars round out. The acidity stops shouting and starts speaking. The cup tastes less like a demonstration and more like a conversation.

We re-profiled every coffee on the menu that month. Slower is not always better — but it is always worth asking.
